A place to start if you're going to do field recording with a digital recorder or direct to laptop is Audacity. It's a free, open-source recording and editing program. I've been using it for several monthis to edit and mix audio files and have found it very satisfartory for my purposes. There are many features I haven't even tried to use yet. In fact, Audacity is something of a standard app for podcasting. Buzz Andersen mentioned it at Net Tuesday as the right program for mid-level production.
One thing it lacks is thorough documentation. It has online help that is pretty basic. But here's a Dummies page about using Audacity to create files for Bittorrent. And I just now discovered there's an Audacity forum.
If you want to get started and don't mind learning by trial and error, the price of Audacity is right.
